Gratineed Pineapple

I first found the recipe for the delicious tropical dessert on Pinterest and have since posted it on the Facebook page.  We had a huge response to it with plenty of paradise lovers keen to recreate this beautiful recipe at home, so I thought I would share it with you guys too.  Enjoy! x
 

Ingredients:
½ cup shredded sweetened coconut
½ cup crushed gingersnap cookies
½ cup chopped macadamia nuts
½ cup sweetened condensed milk
2 tablespoons dark rum
1 large pineapple, leaves intact, halved lengthwise

Method:
1. Stir together coconut, gingersnap cookies and macadamia nuts. Set aside.
2. Whisk together sweetened condensed milk and dark rum. Set aside.
3. With a sharp knife slice the pineapple in half with leaves intact. Cut the core from each pineapple half and discard. With a small sharp knife carefully cut the remaining pineapple out of the shell. Cut into 1-inch cubes. Arrange pineapple halves skin side down on a rimmed baking sheet. Fill with pineapple cubes. Drizzle with half of the sweetened condensed milk mixture. Sprinkle heavily with coconut mixture. Drizzle with the remaining milk mixture.
4. Bake at 160 degrees for 20-25 minutes or until golden brown and bubbly.
5. Serve warm with a knife, fork and a refreshing tropical cocktail!

DIY Seashell Candle

Transform your beach treasures into beautiful decorations with these easy shell candles.

What you'll need:

• Bar of paraffin wax
• Wicks
• Metal wick holders
• Double boiler with a pouring lip
• Shells
• Stubs of old coloured candles (optional)

Most of these items can be found in your local craft shop. If you can't find metal wick holders, remove the wicks from tealight candles. You can use stubs from old coloured candles to make candles in various shades.

Method:

Clean shells in a 10% bleach solution. Rinse with cool water and let dry.

Cut up the paraffin block into smaller chunks with a sharp knife. Melt them in the top of the double boiler by heating the water below to a slow simmer. Use the paraffin as is, or you may wish to add bits of coloured wax for different colour combinations.

Cover a steady surface with plastic or old newspaper. Balance one of the shells on a small cup and slowly pour in the melted wax. Immediately place the wick and wick holder in the centre of the shell. Leave wax to cool and set for at least 30 minutes.

Light, and enjoy your beautiful new sea shell candles!
